Out of Hong Kong on a Friday, Papeete by Saturday morning — Air Tahiti Nui via Auckland, French Polynesia 17,000 km away across the Pacific. Austral winter ahead, the trade-wind season at 26 °C dry, the lagoons mirror-flat from June to August. Eight nights across three Society Islands and one Tuamotu atoll — one in Tahiti at the start for the Papeete market, two on Moorea for the pineapple plantations and the snorkel with sting-rays in the lagoon, three on Bora Bora for the over-water bungalow and the Mount Otemanu silhouette at sunset, and two on Rangiroa, the second-largest atoll in the world, for the pass dive among dolphins and the lagoon-within-a-lagoon. Chapter 01 · the story

Papeete is the capital nobody comes for. The point is the islands further out, and Tahiti is the airport you land at. But the roulottes roll into Place Vai'ete at six, the grills come on, and for one jet-lagged night the city is the trip.

Papeete sits on the leeward side of Tahiti, the volcanic main island of French Polynesia, and most travellers see it through the window of a connecting Air Tahiti hop. The plane lands at Faaa, the taxi takes ten minutes to the waterfront, and the Pacific is already doing the particular thing it does on this latitude — flat, warm, blue past the reef line, the colour of a swimming pool somebody built too big.

The Marché de Papeete is the old central market, two floors of French-colonial iron and tile, vanilla beans stacked in pyramids on the ground floor and pareos hung from the rafters of the second. Downstairs the fishmongers slice mahi-mahi to order. The poisson cru — raw tuna cured in lime juice and coconut milk with cucumber and tomato — is the dish the island runs on, and the version at the market is the version everyone else copies.

At sundown the roulottes roll into Place Vai’ete on the waterfront. They are the food trucks of Tahiti, vans converted into kitchens, and they park in a square next to the ferry terminal in a ring. The menu boards say steak-frites, chow mein chinois, crêpes flambées, brochettes of beef and mahi-mahi. The diners sit on plastic stools at folding tables in the open air. A Hinano costs 500 CFP. The ferry to Moorea is across the road and the first sailing leaves at 6am.

What Papeete is good for is the gap between arriving and leaving. The 727 m volcanic plug of Mount Otemanu is three flights away. The 78 km lagoon of Rangiroa is four. Tonight is one beer at a folding table at Vai’ete, the smell of charcoal and lime, the ferry horn across the harbour. The rest of the trip can wait until morning.

Moorea · the shark bay

Two nights on Moorea, Tahiti's heart-shaped sister. The lagoon at Tiahura has sting-rays so habituated to humans they drape across the snorkeler's shins, black-tip reef sharks circling 10 m away.

Chapter 02 · the story

Cook's Bay and Opunohu Bay are the same bay. One volcanic crater collapsed seaward two million years ago and the sea walked in through the broken north wall, leaving the two finger-inlets that now hold Moorea's postcard. The island is a ruined caldera with a road around it.

The Air Tahiti ATR lifts off Faaa and lands at Temae fifteen minutes later — barely enough time for the cabin to finish handing out boiled sweets. From above the shape of the island is unmistakable. Moorea is heart-shaped, and the lobes of the heart are the rim of an ancient volcano that collapsed inward and then seaward, leaving two deep bays cut into the north coast: Opunohu to the west, Cook’s to the east, with the green ridge of Mount Rotui standing between them like a divider somebody forgot to remove.

From the belvédère lookout, 240 m up, the geometry becomes obvious. Both bays open into the same lagoon, both reach the same way back toward the same dead crater, both have the same near-vertical walls of jungle dropping into still green water. Cook anchored in the east one in 1777 and named it after himself; the locals call it Pao-pao. Opunohu means belly, for the shape, and the research station and the agricultural college and the marae sites are all up that valley.

The lagoon at Tiahura on the north-west shoulder is where the sting-rays come. The boat drops anchor in chest-deep water over a sand patch and the rays arrive without invitation — habituated to two decades of tour boats, draping themselves across shins, nosing for the bait in the guide’s bucket. Ten metres further out the black-tip reef sharks make the same circuit they always make, indifferent. Their tails are tipped exactly the colour the name promises.

In the evening at Tiki Village the dancers do the ote’a — the hip-shaking dance with the pareo skirts and the slit drums — and the tourists clap on the beats nobody clapped on in 1769. Outside the show, Mount Rotui is a silhouette against the last bit of light, the same dead caldera wall it has been for a million summers.

Three nights at the volcanic island wrapped in its own lagoon. Mount Otemanu sits in the middle, the over-water bungalow extends 30 m into the water, the snorkel starts at the deck ladder.

Chapter 03 · the story

Mount Otemanu is 727 m of basalt plug — the throat of an extinct volcano, the rest of the cone eroded off three million years ago — and the lagoon around it is the ring the cone used to sit on. The mountain is the centre. The bungalows are on the rim.

The Air Tahiti hop from Moorea is fifty minutes, and the landing is on Motu Mute — an islet on the outer reef of the lagoon, not the main island. The airport boat shuttle to Vaitape takes another fifteen minutes across water the colour of swimming-pool tile. The resort boat picks up from a different jetty entirely. By the time you have a key in your hand, you have crossed the lagoon twice and seen Mount Otemanu from four different angles.

The island geometry is the trick. Bora Bora’s volcano blew out roughly three million years ago and the sea has spent the intervening time eroding the cone down to its hardest core. What is left is the central plug — Otemanu at 727 m and Pahia at 661 m beside it — and the basalt skeleton sitting in the middle of a turquoise lagoon ringed by motus where the original outer rim used to be. The resorts are on the motus. The lagoon is the moat. The mountain is the keep.

The overwater bungalow extends thirty metres out from the deck into water four metres deep, and the ladder at the back drops straight in. Below it: fish, coral, the occasional sting-ray fingerling, and on a good day a black-tip shark patrolling the channel between bungalow rows. The glass panel in the floor is a habit the resorts copied from the InterContinental Thalasso and the Conrad. Nobody really uses it. The window everyone uses is the front one — the one facing Otemanu.

The lagoonarium tour is the half-day excursion that nobody skips: five snorkel stops around the inside of the lagoon, the manta cleaning station off Anau, the coral garden at the south pass. For lunch the boat puts in at a motu picnic. The drink is rum punch in a coconut. The view, every direction, is the same dark basalt plug rising out of the same flat green water. Three million years of erosion and it still looks like the day the cone fell.

Two nights on the second-largest atoll in the world (after Kwajalein). 78 km long × 25 km wide of lagoon, 240 motu around the rim, a single pass that floods + drains with the tide twice a day.

Chapter 04 · the story

Rangiroa is a 78 km-long ring of coral around a lagoon big enough to hold the island of Tahiti. The land is one metre above the Pacific. The lagoon, twice a day, breathes in and out through two narrow passes. The dive is on the inhale.

The Air Tahiti routes you back through Papeete to get here — there is no direct from Bora Bora — and the flight crosses the Tuamotu archipelago at 18,000 feet. From the window the atolls look exactly like the textbook diagram: ring of coral, lagoon inside the ring, ocean outside, a few palm-topped motus along the rim. Rangiroa is the second largest of the seventy-eight Tuamotu atolls, after Fakarava, and the second largest atoll in the world after Kwajalein in the Marshalls. It is 78 km long and 25 km wide. The land that rings it is, on average, two metres above the water.

There are two passes. Tiputa to the east, Avatoru to the west. The lagoon drains and fills through them with the Pacific tide, and when the tide is incoming through Tiputa, the current accelerates to four knots through a channel two hundred metres wide and twenty metres deep. The dive — the headline of the atoll, the reason boats arrive at Rangiroa from across the Pacific — is the drift through that pass on the inhale. You giant-stride off the boat outside the lagoon, you drop to twenty metres, and the current takes you. The transit is fifteen minutes.

What you see on the transit is the wall of grey-reef sharks that hangs in the standing wave at the lip of the pass — twenty, thirty, sometimes more, holding their position in the moving water without seeming to move. The Indo-Pacific bottlenose dolphins surf the same wave on the surface above. The eagle rays come through in formation. The pass spits you into the calm of the lagoon and the boat is waiting at the inside.

The vineyard is the other story Rangiroa keeps. Vin de Tahiti at the Domaine Ampelidacées grows Carignan and Italia grapes on coral-atoll soil at sea level — the only commercial wine made on an atoll anywhere. The wine is decent. The novelty is the point. At sundown on the motu, a glass of the white, a plate of mahi-mahi sashimi, the Pacific on three sides. The pass breathes out for the night.

Last poisson cru at Papeete market. Then the flight home.

Final lunch at the Papeete municipal market — a bowl of poisson cru à la tahitienne (raw tuna in coconut milk + lime + tomato + cucumber) at a market kitchen, mahi-mahi grillé on a banana leaf. Last vanilla bean from a Faaa stall, taxi to Papeete-Faaa Airport at dusk, Air Tahiti Nui west via AKL. Hong Kong by morning of the day after. Eight nights — one at the Papeete waterfront, two with Moorea''s shark bay on the eyeline, three with Mount Otemanu over the over-water bungalow, two on Rangiroa with the dolphin pod at Tiputa Pass. The poisson cru and the Hinano and the pareo-and- monoï life already half-remembered.
