Out of Hong Kong on a Saturday morning, Sydney by Saturday evening — Cathay or Qantas direct, nine hours over the equator. Seven nights ahead through New South Wales — four in Sydney for the Opera House and the Harbour Bridge and Bondi, one in the Blue Mountains for the Three Sisters and the Echo Point sunrise, one in the Hunter Valley for the Shiraz country, one final night at Jervis Bay for the white sand + the kangaroos on the beach. Early November is the cusp — spring in the Southern Hemisphere, daytime 22 °C, the Sydney jacaranda trees in full bloom for two weeks, the Blue Mountains wildflowers at peak, and the Hunter Valley Shiraz grapes just starting to set fruit before the harvest in late February.
