Seven nights ahead through New South Wales — four in Sydney for the Opera House and the Harbour Bridge and Bondi, one in the Blue Mountains for the Three Sisters and the Echo Point sunrise, one in the Hunter Valley for the Shiraz country, one final night at Jervis Bay for the white sand + the kangaroos on the beach. Chapter 01 · the story

Utzon's sails opened in 1973 after sixteen years of fights about money and geometry, and the architect never came back to see them. The building is now on the fifty-cent coin and the harbour is organised around it, the way Paris is organised around its tower.

The ferry from Circular Quay to Manly takes thirty minutes and runs past the Opera House twice — once on the way out, once on the way back — and the building looks different at each angle the way a sculpture is supposed to. Up close from the forecourt the sails are not white but a million matte ceramic tiles in two shades of cream, manufactured in Sweden and laid by hand. From the bridge they read as origami. From the Manly ferry at dusk they catch the last horizontal light and go gold for ninety seconds.

The Bondi-to-Coogee walk starts at the southern end of the beach, past the Icebergs pool cut into the rocks, and runs six kilometres along the cliffs to Coogee. The path passes through Tamarama and Bronte and Clovelly — the small protected swimming inlet where children learn to snorkel — and the sandstone underfoot has the same warm pinkish colour as the cliffs at Sydney Heads and the foundations of the Harbour Bridge pylons. The whole eastern edge of the city is one piece of rock cut into different shapes.

The Harbour Bridge opened in 1932, four decades before the Opera House, and the two structures argue with each other across the quay in the politest way. The bridge is industrial Glasgow steel; the Opera House is Danish ceramic. Together they make the postcard the city sells itself with. The Rocks underneath, where the First Fleet came ashore in 1788, is now stone-flagged lanes with pubs older than the bridge and the kind of Saturday market that started as a sandstone-quarry yard.

What stays after Sydney is that the city is oriented toward water in a way most capitals are not. Every train line ends at a ferry. Every cliff ends at a pool. The skyline reads from the harbour, not the highway.

Chapter 02 · the story

The Three Sisters at Echo Point are three sandstone pillars the Gundungurra story says were once three women turned to rock by an elder to protect them, and the elder then lost the bone that would turn them back. The rock remembers the women. The viewing platform is two minutes from the car park.

The drive west from Sydney climbs steadily for two hours through Penrith and Springwood and the long ridgeline of the Great Dividing Range, and the eucalyptus forest below the road releases enough volatile oil into the haze that the mountains genuinely look blue. That is the answer to the name: not the rock, not the distance, but the chemistry of the gum trees themselves.

Echo Point at Katoomba is a stone viewing terrace cut into the escarpment edge, and the Three Sisters stand a few hundred metres out into the Jamison Valley. They are 922 metres, 918 metres, and 906 metres tall, and they were carved by the same Hawkesbury sandstone weathering that shaped the cliffs at Sydney Heads — the same warm pinkish stone, the same horizontal bedding, just lifted a thousand metres higher by the plate that built the Dividing Range. The Giant Stairway goes down 800 steps from the platform to the base of the closest sister. Coming back up takes ninety minutes and the calves the next day.

Scenic World is just along the cliff. The Scenic Railway runs down the old coal-mine shaft at a 52-degree incline — steepest passenger railway on the planet — and drops 310 metres into the forest in two minutes. The Skyway glides across the valley with a glass floor that goes opaque-to-clear when the cabin reaches the midpoint. The Cableway is the gentlest of the three and the one the queue is shortest for.

What stays after the Blue Mountains is the haze. The valleys exhale eucalyptus oil into the air all day, the late afternoon sun catches it, and the entire range goes the colour of woodsmoke seen through aquamarine. The Gundungurra were here a long time before the name on the map. The rock remembers.

Chapter 03 · the story

The first vines went into the Hunter in the 1820s, which makes this the oldest commercial wine region in Australia and one of the oldest in the New World. Tyrrell's has been a family operation since 1858 — five generations on the same dirt, still making the Semillon the region is actually famous for.

The Hunter is two hours north of Sydney through citrus country and the long ridge of the Brokenback Range, and the road into Pokolbin turns off onto a series of single-lane roads named after the pioneer families that planted the first vines: Hermitage, McDonalds, De Beyers. The soil is volcanic red over a layer of sandstone, the summers are humid in a way no other Australian wine region is, and the locals will tell you the vintage is decided by whether the February rain holds off.

Tyrrell’s cellar door is a tin-roofed shed built in 1858 with ironbark slab walls and a dirt floor that has been compacted by five generations of boots. The wines on the tasting flight are poured by people who know the dates of the floods that took out the 1955 vintage. The Vat 1 Semillon is the one to ask about — a wine that goes into the bottle at 10.5% alcohol with no oak, ages for ten years in a cellar, and comes out tasting like lime and wet slate. Hunter Semillon is one of the wine world’s quiet anomalies.

Audrey Wilkinson sits on the highest ridge in Pokolbin and the tasting verandah looks east over twenty kilometres of vines to the sandstone bluffs of Yengo. Brokenwood, ten minutes down the road, makes the Graveyard Shiraz the modern era is built on — first vintage 1983, a single block of dry-grown vines on the slope behind the winery. The cellar-door staff will pour the current vintage in the same room as the back-vintage library.

What stays after the Hunter is the old. The vines, the families, the shed at Tyrrell’s, the dust on the access road. The region is doing the same thing it has been doing since the 1820s, and the only thing that has changed is who is doing the drinking.

Chapter 04 · the story

Hyams Beach holds a Guinness entry for the whitest sand in the world — 98.7% pure silica, ground for thousands of years by surf against the quartzite headlands of Booderee. The grain is finer than caster sugar and the sound underfoot is a soft squeak that locals call singing sand.

The drive south from the Hunter takes four hours through the Sydney bypass and down the Princes Highway past Wollongong and the sandstone cliffs of the Illawarra escarpment, and the road into Jervis Bay turns east at Nowra onto the small two-lane that runs through she-oak forest to the coast. The bay is a near-circle of Tasman water sixteen kilometres across, sheltered by two headlands, and the water in November is the deep blue of mid-summer in the Mediterranean.

Hyams Beach is a short crescent at the western edge of the bay, white in a way that looks photographed even when the eye is doing the looking. The silica content is the answer — the local quartzite has almost no iron oxide, the surf has been grinding it for fifty thousand years, and what is left is a powder so fine that wet footprints fill in slowly behind you. The water at the shoreline is clear enough to read the date on a five-cent coin dropped into the shallows.

Booderee National Park sits at the southern edge of the bay and is jointly managed by the Wreck Bay Aboriginal Community — one of three national parks in Australia under Aboriginal ownership. The eastern grey kangaroos at Green Patch and Murrays Beach come down to the picnic tables at dusk and do not move when people walk past. The Cape St George lighthouse ruins on the southern headland were abandoned in 1899 after the keepers realised it could not be seen from the sea and ships kept running into the rocks below it.

What stays after Jervis Bay is the quiet. The bay swallows sound. The sand swallows footprints. The kangaroos do not look up. The coast is still doing what it was doing before the lighthouse, before the road, before the name.

Last flat white at Reuben Hills. Then the short flight north.

Final morning at Reuben Hills coffee in Surry Hills — a flat white with El Salvador single-origin beans, an avocado smash on sourdough.
